Here’s a yummy snack that’s fresh, and creamy all at the same time.

Broad bean and fetta dip

Ingredients:
  • 2 cups broad beans
  • 100g greek fetta
  • 4 tbsp cream cheese
  • 2 tsp olive oil
  • salt and pepper to taste

 

Method:
  1. Place the broad beans in boiling water for 2 mins or until tender.
  2. Remove their tough outer skin, by squeezing the middles out (it doesn’t matter if they get a bit squashed in the process because you’re about to puree them).
  3. Place beans with all other ingredients in your food processor and whizz until smooth.
  4. Chill briefly before serving with carrot sticks, corn chips, or crackers.

This makes a nice change from your standard hummus or avocado dips, and is a great snack to bring along to a bbq or party. I also like having it spread on crackers for lunch. Yum.
