Here’s a yummy snack that’s fresh, and creamy all at the same time.
Broad bean and fetta dip
- 2 cups broad beans
- 100g greek fetta
- 4 tbsp cream cheese
- 2 tsp olive oil
- salt and pepper to taste
- Place the broad beans in boiling water for 2 mins or until tender.
- Remove their tough outer skin, by squeezing the middles out (it doesn’t matter if they get a bit squashed in the process because you’re about to puree them).
- Place beans with all other ingredients in your food processor and whizz until smooth.
- Chill briefly before serving with carrot sticks, corn chips, or crackers.
This makes a nice change from your standard hummus or avocado dips, and is a great snack to bring along to a bbq or party. I also like having it spread on crackers for lunch. Yum.
