This wee idea popped into my head just as I was drifting off to sleep last night, so I jotted it down in an email to myself so I could make it for lunch today.
The email said “Crete comb zucchini switches” because I was tired and not wearing my glasses, but luckily it was enough to jog my memory.
It’s a very easy way to get a little extra veg into the family at lunch time, and it’s toddler-approved.
Cream cheese, corn and zucchini finger sandwiches
Ingredients
- 1/4 cup grated zucchini
- 125g corn (canned or fresh)
- 60g cream cheese
- 4-6 slices of bread (depending on how many sandwiches you want to make)
Method
- Place all ingredients except the bread in your food processor, and process until smooth.
- Spread on bread, and cut into strips.
That is literally it.
This also works as a yummy dip with carrot sticks or crackers. I think I might make some for Arty’s birthday party in a week or two (shut up, my baby is *not* turning three, you lie!)
